Tempatire gauge 1987 pioneer

I have a 1987 Jeep cheorkee and the tempature gauge will slowly go up and sit at about 180 it never goes over that I’ve identified that it’s operating tempature is 210 with a gun at the thermostat housing but the gauge just won’t go up to 210 I know for a fact that the engine is operating at 210 but for peace of mind I’d like to know why it won’t reach 210 I even tested the gauge with a ground wire so what could it be ?
 
Have you tested the sensor yet? Have you tested the gauge?
 
I mean testing the sensor for its resistance across the full temp range. Same applys to the gauge. Make sure all your grounds are good.
 
A pan of water, a thermometer, and a ohmeter! Monitor the resistance (and temp) at different temps and compare to the factory specs. For the gauge you check the gauge with simulated resistance representing the temp you should be seeing at the gauge (according the the factory specs).

I don’t even know how that would work I put why in the the pan of water
And how do I test the gauge ?

Put the sensor in the pan of water! For the gauge either a fixed resistor for the temp you want to check or a potentiometer for variable temps.
